When I made these vegetable lasagna rolls I decided to double the filling to freeze and use for another meal. But I must have gotten carried away when stuffing the rolls, because I used every bit of the filling — and I’m glad I did, because they may have been a bit boring with less of that delectable veggie goodness, which includes zucchini, carrots, mushrooms, and spinach. Along with doubling the filling, I recommend doubling the sauce. Asparagus Mushroom Stir-Fry from The Garden Grazer

This recipe comes together lightning quick, and it’s wonderful — fresh-tasting and full of flavor. It’s as easy as sauteing the veggies (feel free to use any you choose), whisking together a few ingredients, and tossing everything together. The sauce was a bit thin for my taste, so I thickened it using this easy technique: After mixing the veggies and sauce together, put 2-3 tablespoons of the sauce in a small mixing bowl, then add 2-3 tablespoons of cornstarch. Whisk together, then add back into the wok or pan, tossing and stirring to fully mix the sauce and coat the vegetables. As the veggies heat, the sauce will thicken in just a few minutes. Vegetable quiche from Real Mom Real Food

Quiche is one of my favorite dishes, but I’ve been under the impression that it’s tricky to make. Well not according to this recipe. It came together in a snap — even the made-from-scratch whole wheat crust! I would have liked it to be a bit thicker, so maybe next time I’ll increase the amount of eggs and milk. Also next time I’ll chop the spinach a bit smaller and more thoroughly mix it in; it floated to the top of the quiche and didn’t cook all the way in some spots.     I made the asparagus and mushroom stir-fry for lunch today. I added a little fresh ginger at the end. So good! Thanks for sharing. I plan on making the lasagna roll-ups soon too.
